A fabulous combination of flavors and textures--the cake-like batter magically rises to the top as it bakes resulting in crispy edges with interior pockets of soft, gooeyness. The sugared peaches caramelize as they bake. So yummy!

Ingredients
  • 6 cups sliced fresh peaches (peeled or not--your choice)*; about 6 medium peaches weighing 2 lbs before cut and pitted
  • 1 1/4 cups granulated white sugar, divided
  • 1/4 cup brown sugar
  • 2 tablespoons fresh lemon juice (from 1 lemon)
  • 1/2 cup butter (1 stick)
  • 1 1/2 cups all purpose flour
  • 2 teaspoons baking powder
  • 3/4 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1 1/4 cups milk (2% or whole)
  • 1/2 teaspoon almond extract

Directions
*I prefer not to peel the peaches. They completely soften during baking so they aren't even noticeable. Plus, it's easier to not fool with peeling. However, feel free to peel them, if you prefer.

Preheat oven to 375 degrees F.  

PREP PEACHES: To large microwave-safe bowl, add sliced peaches, 3/4 cup white sugar, brown sugar and lemon juice; stir to combine. Microwave uncovered on high for 8 minutes, stirring half way through. Peaches will release juice during microwaving that becomes syrupy as it cooks with the sugar. (May also cook on stove-top. Bring peach mixture to a boil in a saucepan and simmer for 5-6 minutes.)

MELT BUTTER: Cut butter into 8 pieces, scatter in 9x13 dish, and place in preheated oven. Remove from oven as soon as butter is completely melted.

MIX BATTER: In large bowl, combine flour, baking powder, salt, remaining 1/2 cup granulated sugar, and cinnamon; whisk to combine. Add milk and almond extract. Whisk just until no dry bits are visible. It's okay if there are a few small lumps.

Pour batter over melted butter in baking dish. DO NOT MIX. Spoon peaches evenly over batter, drizzling any liquid over the top. DO NOT MIX.

BAKE IT for 45-55 minutes, until golden on top. Batter will mix with butter and peaches and rise as it bakes. Cool for at least 15 minutes before serving.

SERVE warm or at room temperature with whipped cream or ice cream.

When our local Eckert's peaches are in season, that means it's time to make peach cobbler. I recently served this favorite recipe to my Book Club, and it got raves. This flavorful cobbler can be thrown together quickly and served warm or at room temperature. I baked it so it came out of the oven right as my Book Club friends were arriving, so it was still slightly warm when it was time for dessert following our book discussion. This recipe uses an easy method that is popular in the US Southern states. Melted butter on the bottom of a baking dish is drizzled with a thin batter, and topped with sweetened peaches. As the cobbler bakes, the buttery batter rises up and magically mixes with the peaches. The final result is a fabulous combination of flavors and textures--the cake-like batter is crispy on the edges with interior pockets of soft, gooeyness. The sugared peaches caramelize as they bake.

Step 1. Assemble the ingredients:

  • fresh peaches
  • flour
  • baking powder
  • sugar
  • salt
  • cinnamon
  • milk
  • almond extract
  • butter
  • fresh lemon juice

Step 2. Slice each peach into approx. 12 slices. I don't peel mine, to make it easy. The peels soften when the cobbler bakes. However, you can peel the peaches, if you prefer--up to you.

Step 3. Combine sliced peaches with white sugar, brown sugar and lemon juice; give them a stir to evenly coat the peach slices.

Step 4. Microwave the peach mixture uncovered on high for 8 minutes, stirring half way through. Peaches will release juice during microwaving that becomes syrupy as it cooks with the sugar. Step 5: Mix the batter: In a large bowl, combine flour, baking powder, salt, remaining granulated sugar, and cinnamon; whisk to combine. Add milk and almond extract. Whisk just until no dry bits are visible. It's okay if there are a few small lumps.
